Eggs and coffee, hold the bacon

Have I ever mentioned goose eggs? Goose eggs are marvellous for poached eggs. The white is firmer, solider, and there's more of it. The local upscale super failed to have goose eggs last week and I was in withdrawal after barely a month of them. Chicken eggs just aren't the same, and anyway free run chicken eggs are thin-shelled and the yolks tend to break. Goose eggs are thick-shelled and the yolks also tend to break, but the whites make up for it.

The other find is iced Vietnamese coffee made with condensed milk. I'm sure it has as many calories as any Starbux frappucino, with or without whipped cream, but oh does it hit that perfect spot, which Starbux frappucinos don't.

I've had some free-range and not-free-range chicken eggs with very hard shells before. I should probably pay attention to which brands, I had the impression they were higher quality eggs. The only readily available fresh eggs here are chicken and quail; ducks come salted or as century eggs.

Any good strong coffee is great with condensed milk. /big condensed milk fan. Stuff also spreads on bread well, like dulce leche.

I imagine your hens eat different stuff from our hens, though.

It seems a waste, in a goose-keeping culture (which Toronto by and large is not), not to have fresh goose eggs.

Maybe they expect you to keep your own geese and wrestle them for the eggs yourself. I understand they make pretty fiesty watchpoultry. :)

Having read Hardinge's Fly By Night, where a goose holds off a pirate attack, I will believe they are not to be trifled with.

Coffee with chicory is particularly good with sweetened condensed milk.

I buy my coffees in coffee shops, never having mastered the art of the coffee maker. This might inspire me to try again.

oh i love goose eggs too. i have only had them hard boiled, but the white is translucent and super pretty.  have never seen them here in the states. i dont't know where i can get any.

Odd, when I poach them the white is hardly translucent. Rather a more dense white than chicken eggs.
